Okay so this is one of the greatest things I’ve ever tried out. Vanilla bean settling to the bottom, and creating a pretty cool looking design at the top, aside, this is a massive success! I used whipping cream with a splash of milk to thin it out and it tastes, expectedly, like sweet vanilla whipping cream, but it’s just this side of rich that it almost reminds me of vanilla, just in jello form.
I made a caramel sauce to go with it, since I didn’t have any frozen berries. I think I would have preferred a berry or other fruit sauce to balance out the richness of the panna cotta, but the caramel adds this slight burnt sugar flavor and it’s pretty nice.
(on coming on to a successful show three seasons in) It’s really exciting because you already know it’s a big show and everybody loves it. Everybody already knows what’s happening. But it’s also really intimidating and scary at the same time, because it is a show that does so well, there are a lot of expectations. You have to be up to par with everybody else.
